My No Meat Athlete shirt :) woooo! I got it from Matt over at No Meat Athlete. I wore it yesterday when I went for a quick 3 mile run at the gym and I felt like everyone was giving me a dirty look hmm, what gives? Maybe ’cause I’m a proud veggie head! Hopefully though since I was a speed demon on the treadmill people will think, “wow! Look at her go! Maybe if I convert to vegetarianism I’ll be fast like that.” Haha only in my dreams, right? ;)
I’m on a real strawberry kick lately. First my strawberry shortcake oats and now this.
I’ve never been a fan of eating a salad with fruit in it. But since it’s been around 60* outside I’ve been in the mood for light, Spring inspired dishes. Which is why I decided to bite the bullet and try the widely popular strawberry spinach salad. It’s also the perfect opportunity to get some greens and fruit in my diet because when it’s cold and cloudy outside I never crave a salad.
I’ve seen many variations of this salad so I said to myself, “self, this salad must be good if everyone keeps putting a spin on it!” Practically every restaurant has some variation of a strawberry spinach salad on its menu. We have a huge tub of organic spinach in the fridge and strawberries so this salad was practically screaming for me to make it. And I’m soooo glad I did! This is definitely my new favorite salad.
Strawberry Spinach Salad with Sliced Almonds and Sweet vinaigrette
Simple, light, and refreshing. You won’t regret making this salad. (Serves 1)

- 2 cups organic baby spinach
- 3 strawberries, sliced
- 2 tbsp (8) almonds, sliced
- 1 tsp minced sweet white onion
- 1 tbsp extra virgin olive oil
- 1 tbsp white vinegar
- 1/2 tsp sugar
- 1 tsp sesame seeds
- sprinkle of paprika
- Whisk together olive oil, vinegar, and paprika. Add in sesame seeds, sugar, and minced sweet white onion. Set aside.
- Chop and slice the strawberries and almonds and place in a bowl. Add spinach and then drizzle dressing on the salad.
See how easy it is?! Begin by gathering up your ingredients.
The sugar really brings this salad together. When I first read how much sugar was in the recipe I cut it down to just half a teaspoon and it still does the trick! This salad isn’t overly sweet thanks to the vinegar. I wish I would’ve made a bigger bowl of salad :D.
I was iffy on putting onion in the vinaigrette with the strawberries but everything just works. Trust me.
I enjoyed my salad with a slice of my homemade whole wheat Irish soda bread! Gotta have them carbs fillin’ up my glycogen stores ;).

I can’t wait until the Spring when I can enjoy this outside in the sunshine… pure bliss.
