I also had a smoothie fail yesterday:
In the smoothie fail:
- 1 cup almond milk
- 1 scoop SunWarrior vanilla protein powder
- 1/2 cup mixed tropical frozen fruits
- 1 tbsp full-fat coconut milk
Blech.. it just didn’t taste right. All the flavors were so off. I took a few sips but just could not bring myself to finishing it! Maybe it was the combo of all the flavors together? I have a bunch of coconut milk leftover from the muffins I made so I have to find a way to use it up.
Anyone have any coconut milk recipes? Maybe I can make some ice cream!
I also made a trip to heaven Trader Joe’s.
5 fruit leathers (apple raspberry = fav!!!), unsulfured apricots (so tart, love them), and watermelon (so refreshing!).
I was surprised I couldn’t find any out-of-the-normal finds at TJ’s today but I guess everyday you can’t hit the grocery store jackpot. I saw some good finds but I wanted great finds.
Oh well, there’s always next time (and we know next time will probably be in two days
).
Meet my new favorite lunch:
Dr. Kracker’s with tomato paste and 1/2 an avocado + sprinkle of oregano and garlic powder and a squirt of fresh lemon juice.
Juicccyyyy.
Fill ‘er up.

It was so nice and hot out yesterday that it was the perfect day to make lemonade!
Freshly Squeezed Lemonade
- 1 lemon
- 1/4 cup water
- 1/4 cup organic white sugar
- 1 tsp lemon zest
- more water + ice for mixing
Directions: Heat up the 1/4 cup water and 1/4 cup sugar over medium-high heat and stir constantly until the sugar is dissolved (this is the simple syrup). Once the sugar is dissolved, turn the heat down to low and add in the lemon zest. Stir and allow to cook until slightly boiling (about 2 mins) and then turn off the heat and allow to cool. Once cooled, combine the simple syrup (water + sugar + lemon zest) + juice from 1 lemon and water + ice as needed to fill up your jug (I used a 1.2 L jug). Keep chilled in the fridge until use.
*This lemonade had a nice subtle sweetness without making you feel like you’re drinking straight up sugar. If you prefer a sweeter lemonade, use 1/2 cup water + 1/2 cup organic white sugar for the simple syrup and cook per directions.
Making the simple syrup is crucial to have a nice smooth lemonade without having grains of sugar in every sip.

You could even make this REALLY fun by rimming a glass with sugar and pouring the lemonade in it, almost like a margarita with a salt rimmed glass!
Just cut a lemon in half and rim the glass with the lemon juice so the sugar sticks to it. Dip the glass in organic white sugar and enjoy!
How fun would that be?? A little extra pop of sweetness with each sip! Yumm.
Oh, and the PMS Hunger has returned.. throughout the day I snacked on a fruit leather + more fruit + pretzels (was craving salt!) + CHOCOLATE (lots!!).
Whenever it’s that time I usually crave sugary treats + excess snacking like craaaa-zaay!
Does anyone else have PMS Hunger?? Mine is rather obnoxious and wants food when it wants it!
Last night I also tried out a new dish that I picked up from Trader Joe’s a while ago.
I made some quick cooking 5 minute couscous and served this on top of it. The meal was done in about 5 minutes and was perfect from when I got home from a really hard spin class.
Spin, spin, spin:
- 1 – 8 minute intervals of running on HILLS
- 1 minute recovery
- repeat for 45 minutes = one SWEATY Julie
Yikes! That one hurt.. glad it was over but spin always makes me SO SO hungry; more so than running!
I enjoyed this Indian dish mostly because it was a quick dinner.
I didn’t overly like the flavors but it was bearable. Honestly, I was just so hungry that I didn’t feel like making anything else! I don’t think I like Indian flavors that much either just from other dishes I’ve tried or made. I think I just need to experiment more with different Indian flavors and spices and find out what works for me.
I do love Italian food though (my fav cuisine) and was yearning for some with each bite of the couscous.
