This morning I sprung awake at 7:50! I was so psyched to get to the gym
. I’ve never felt more excited to workout haha…
Before I left I made my Classy Classic Oats!
Classy Classic Oats:
- 1/3 cup oats
- 1 cup unsweetened almond milk in original (or any milk)
- 2 tbsp ground flax
- 1 tbsp almond butter
- drizzle maple syrup (about 1 tbsp)
- 1 tsp cinnamon (or more, I love cinnamon!)
- sprinkle of raisins
Combine milk & oats in a pot over medium heat. Cook until the mixture begins to turn creamy (7 mins or so) add flax & cinnamon and let incorporate for a minute. Pour into a fancy bowl and garnish with almond butter, raisins, maple syrup, and a sprinkle of cinnamon. This is a very easy and a classic oatmeal breakfast that would please anyone’s taste buds. Feel free to double or triple recipe if serving for a large crowd!
I enjoyed mine with a cuppa coffee.
Then it was time to get sweatin’!
Workout:
- 15 min light walking on treadmill (warm-up)
- 55 minutes spin class (INTENSE)
- 20 minutes arm exercises (weights)
- 10 minute leg exercises (weights)
- 1 minute plank
- 3 minutes stair climber
- total time spent at gym: 2 hours
WOW (!!!!!) Spinning was freakin’ awesome
. I now know how Niagara Falls feels…all wet and what not. I love to sweat and what I love even more is when you start to feel the burn! In spin we climbed hills, did push-ups while riding the bike (oww), jumps, sprints, etc. I was more sweaty than Niagara Falls. I felt like a champion though. Call me Rocky, k?
Upon getting home I stuffed an almond butter chew in my mouth & ran to the shower. To refuel I made a quick & easy lunch!
Lunch
I got all 3 food groups in: protein, starch, and veggies. Go me
I cut and roasted a small organic ‘tater along with some drained and rinsed chickpeas. I sprinkled both with a little fresh cracked black pepper, drizzle of olive oil, and red pepper flakes. Put in a oven pre-heated to 420* and roasted for 20 minutes. Then I took it out of the oven and added a ton of broccoli! I also sprinkled that with EVOO, red pep flakes & peppa. Ten minutes later and lunch was ready!
I love roasting chickpeas because they get all crispy crunchy. In my opinion, crunchy chickpeas are so much better than boring ‘ol non-roasted chickpeas
. They’re also full of protein and just as fun to eat as chips so you can keep poppin’ ‘em in your mouth while still getting that same crunchy satisfaction as if it were a chip.
I need ketchup rehab.
Simple, easy, crisp, and fresh. It doesn’t get any better.

I’m so excited for the Superbowl tonight! Mostly because of all the great food and friends that come over
Who are you all rootin’ for!? None of my teams are in it this year (not like I have teams or even follow football…) but I want Green Bay to win. I’m even rockin’ a green tank and fun yellow earrings! I can’t stand the Steelers… lol. Sorry Steelers fans, you’re goin’ down!
