Has anyone else noticed my banana obsession lately?!
PB&J Banana VOO
A spin-off of everyone’s childhood favorite sandwich but in oatmeal form!
- 1/3 cup rolled oats
- 1 cup almond milk
- 1-1.5 tbsp chia seeds
- tiny splash of vanilla extract
- 1/2 banana, chopped
- mix-ins: organic peanut butter, organic grape jelly, brown rice crispies, cinnamon
Mix the oats and chia seeds together and then add in the milk, vanilla extract, and banana. Place in the fridge overnight or for at least 2 hours. In the morning, layer with organic peanut butter, organic grape jelly, sprinkle of cinnamon and brown rice crispies.
I added 1.5 tbsp chia seeds because I looove them! If you’re not that big of a fan you can use 1/2 tbsp but you may have to change the almond milk ratio.
Begin layering by adding in the brown rice crispies, then the VOO mixture, peanut butter, jelly, and repeat until all the VOO is used up. I used a total of 1 tbsp brown rice crispies, 1 tbsp peanut butter, and 1 tbsp jelly but you can adjust the amounts to your liking!
Mmmmmmmmm… so good. Check out those banana chunks in there too!
I sprinkled mine with cinnamon to add a little more depth. Perfection.
My Monday morning started off pretty hectic…
Monday morning crisis #1: My car was on empty so I had to scramble to the nearest gas station to fill up. Since New Jersey law won’t let you pump your own gas I have no idea how to pump my own gas so, I had to drive to a gas station that was open and would pump it for me! $40 later and I was on my way to school…
Since I have a lot going on this week school-wise I decided to make a to-do list!
I find that when I make a to-do list I get to see what needs to be done and how much time I need to budget for everything. I already have a few things crossed off! This blog post is going to be one, too!
Lunch was delicious and definitely made up for my gas dilemma!
I had leftover avocado and brown mustard seed "dip" with carrots, celery sticks, sugar snap peas, and a Trader Joe’s whole wheat wrap with Earth Balance butter + paprika + garlic powder. I need to get to the store and buy more avocados so I can make this dip again. It’s so good! I’ve already been thinking about what I can do to make a few spin-offs of it.
Dessert was the most delicious mango slices that have ever crossed my lips along with 2 medjool dates.
Can’t forget about the H2O!
Monday morning crisis #2: After lunch I headed over to the student center try to and sign up for a summer class. However, it wouldn’t let me because I hadn’t taken a basic math course. This is the second time this happened to me and I’m so annoyed because I took pre-calculus before and took calculus over the Summer last year and got an A so I don’t need basic math. I was also worried I wouldn’t be able to get in the class I wanted to take because it would fill up quickly. Long story short, I ended up getting things sorted out and now I’m in the Summer class I had wanted :).
I also ended up doing a little homework for my business class. Check that off the to-do list!

After my classes were over I went to Wegmans to pick up some goodies.
- unsweetened shredded coconut
- vegan carob chocolate chips
- 2 tiny tins of cacao nibs with a dark chocolate coating
- edamame + black bean salad
- bag of Bob’s Red Mill organic rolled oats
I was disappointed when I tried the vegan chocolate chips. I was soo looking forward to them tasting good but they stuck to my mouth and had a really weird texture. Maybe it was just the brand? I’m going to stick to real chocolate though. 100x better!
When I got home at 2:45 I was starved so I had 1/2 of the edamame + black bean salad I picked up along with a lemon Chobani and 2 homemade graham crackers. Talk about protein!
I’m so going to try to recreate this salad at home! It is so good and packed with protein from the edamame and black beans.
I’m off to cross off some more things on my to-do list and then go to my cousin’s birthday party.
Is anyone else excited for the Bethenny Ever After premier tonight on Bravo?! I love her!
